Chocolate cake and mini pears refreshed in pear brandy – by Afternoon tea
1. Melt the chocolate and the butter in a bain-marie. Mix well to obtain a smooth and shiny melted chocolate. 2. Blanch the eggs with the sugar. The mixture must be foaming. 3. Add the melted chocolate to the egg/sugar mixture. Mix tenderly. 4. Add the flour, the cornflour and the salt flower, mix and keep the pastry cold for 30minutes (the pastry must be solidified to avoid the pear to sink into the pastry). 5. Preheat the oven at 200°. 6. Grease 2 baking tins, put the pastry in the baking tins and place 2 mini pears in the middle. Put it in the oven for 13minutes.
