1 puff pastry
1 filet mignon
3 thin slices of cured ham
130g of duck foie gras mousse
1 egg yolk
Preparation: Preheat the oven at 180°C (thermostat 6). Place a piece of greaseproof paper in the bottom of a baking pan. Roll the puff pastry out on this paper. Put the cured ham in the length of the pastry (the cured ham has to make the same length as the filet mignon). Place the filet mignon on it, smear the filet with the duck foie gras mousse. Close the puff pastry around the filet mignon. Thanks to a knife, make 4 holes on the top of the pastry. Brown with egg yolk thanks to a cooking brush. Cook in the oven for 45min to 1hour according to the size of the filet mignon.
